English Cider

Dry, full bodied, austere cider. Includes English "West Country" plus related ciders. Entrants MUST specify carbonation level (still petillant) and sweetness (dry, medium)

Profile

Full body. No overt apple character, but flavors that may suggest apples. Some tannin present with moderate astringency, with some bitterness. May have smoky bacon character. Medium to deep gold color. Clear to brilliant.

Ingredients

Apples with some sugar adjuncts. High gravity wine, champagne or ale yeast. Often distinguished by apple variety (Kingston Black, Stoke Red, Dabinett, Foxwhelp, Yarlington Mill, Jerseys).
