French Cider

Medium to sweet cider, full bodied and rich. Includes Normandy styles. Entrants MUST specify carbonation level (petillant or sparking) and sweetness (medium, sweet)

Profile

Medium to full body. Fruity character/aroma. May use arrested fermentation or juice to enhance sweetness. Medium to deep gold color. Clear to brilliant. Moderate to high carbonation.

Ingredients

Apples with some sugar adjuncts. High gravity wine, champagne or ale yeast. Often distinguished by apple variety (Nehou, Muscadet de Dieppe, Reine des Pommes, Michelin, etc).
