New England Cider

Cider made with New England apples for high acidity, and adjuncts to raise alcohol levels. Entrants MUST specify carbonation level (still petillant or sparking) and sweetness (dry, medium, sweet)

Profile

Substantial body and character. Dry, flavorful cider with robuse apple character, strong alcohol. Substantial, alcoholic. Moderate tannins. Clear to brilliant, pale to med yellow.

Ingredients

High acidity New England apples (Northern Spy, Roxbury Russet, Golden Russet). Adjuncts include brown sugar, molassas, honey and raisins. Adjuncts use to raise OG. Sometimes barrel aged.
